sun-dried tomato sauce
ingredients
½ cup (packed) sun-dried tomatoes (not in oil, check dry bulk section), soaked in hot water with a pinch of salt for 10 minutes
1 cup hot water (additional)
3 tablespoons lemon juice
1 cup tightly packed fresh basil
4 cloves garlic, smashed
2 tablespoons olive oil
1 pinch each sea salt + black pepper (plus more to taste)
instructions
add all ingredients (sun-dried tomatoes, hot water, lemon juice, basil, garlic, olive oil, salt, and pepper) to a blender and blend on high until creamy and smooth. if it’s too thick, add more water to thin until pourable consistency. add more lemon, garlic, basil, or salt, if needed. store in condiment bottle like this, if you have one.
