overnight steel cut oats

makes about 4 servings

ingredients

1 teaspoon coconut oil (fat) 

1 cup steel-cut oats (protein)

3 cups water 

pinch of redmond real or grey salt

1 cup green apple or berries (starchies)

additional fat—nuts/seeds or nut/seed butter or mct oil

instructions

start this the night before you want to have steel-cut oatmeal. 

heat 1 teaspoon coconut or olive oil in a 2-quart saucepan set over medium heat. add the oats and fry them for about 3 minutes, or until they start smelling toasty.

pour in the water and add the salt. stir. bring to a rolling boil.

turn off the heat and cover the pan. leave it on the stove, and go to bed!

in the morning, divide into your proper portions, store additional meals in jars with lids. 

here, you could mix in chia seeds to complete your fat portion, or you can add coconut butter, nut/seed butter, seeds, or mct oil on top when ready to eat. 

top with green apple or berries.

serve with broth-sautéed greens or a green smoothie or juice to complete the meal.
