tofu veggie stir fry

makes 2 servings

ingredients

½ block high protein tofu

small yellow bell pepper, sliced

½ yellow onion, sliced into big chunks

1 bunch broccolini

2 cups green cabbage, chopped into big pieces

2 green onions, sliced

¼ cup tamari

2 tablespoons coconut aminos

1 tablespoon coconut oil

grey salt, if needed

2 portions pre-cooked brown rice

instructions

press and cut the tofu into big strips. marinate in tamari and aminos while you chop everything else.

heat a skillet and add coconut oil. when oil is heated, add tofu and brown it on both sides.

you can remove and cook the vegetables or cook them at the same time. add onions to pan. when turning translucent, add broccolini and cabbage. add bell pepper last. cook until desired tenderness.

at the end, add tofu back to heat, if you removed it. season with a bit of salt or any of remaining sauce.

serve over brown rice. top with green onions.
